Omni Las Colinas Hotel announces veteran chef Isaac Pacheco as executive chef of all food and drink at the popular Irving luxury hotel.
The new appointment includes LRH Restaurant & Bar, OTC “Over The Counter”, The Lakehouse Waterfront Lounge, and at Flossie, as well as banquets, catering and in-room dining. The four dining concepts are part of a $ 13 million renovation completed in 2020 to elevate the hotel as a premier destination in Dallas-Fort Worth and surrounding areas.

Prior to joining the team at the Omni Las Colinas Hotel, Pacheco held the position of Executive Sous Chef at the Omni Houston Hotel, where he oversaw two restaurants, a cafe, in-room dining and 65,000 square feet of dining. banquet and catering area. It was during his time in Houston that he developed a strong camaraderie with local Texas farmers, ranchers, growers and growers, which is a constant focus in his new role.
Although each restaurant concept at the Omni Las Colinas hotel has its own personality, one common thread remains constant: the emphasis on seasonality.

Pacheco brings over 23 years of culinary and hotel experience across the United States and the Caribbean to his new role at the Omni Las Colinas Hotel. Prior to assuming this role in February 2021, Pacheco ran the kitchens of notable hotels, including the Omni Houston Hotel (Houston, TX); Caribe Hilton Hotel (San Juan, RP); Omni Orlando Resort at ChampionsGate (ChampionsGate, FL); Fontainebleau Miami Beach (Miami, Florida); The Fisher Island Club (Miami, Florida); The Ritz-Carlton, San Juan (San Juan, PR) and the Hilton Waikoloa Village (Waikoloa Village, HI).
Pacheco’s culinary talents have been showcased at Saborea Puerto Rico, the Miami Food & Wine Festival, the Hawaii Chocolate Festival and at numerous Chaine de Rotisseur chapter dinners across the Caribbean.
